Halawet Al-Juben

The exact English translation for “Halawet Al-Juben” is the “Sweetness of Cheese”. As the name indicates, it is a dessert made from low fat cheese mixed with sugar and semolina flour.

The hot mixture is spread into thin layers, folded after cooling and cut up into small pieces to be served with a topping of crushed pistachio nuts and sugar syrup.

Halawet Al-Juben can also be folded around clotted cream and served with the same toppings. Although the cities of Hama and Homs are most famous for making this delicious dessert, Damascene sweet makers have managed to get their own slice of this delicacy.
